'Fuss-free' Paleo Turkey Meatballs Recipe
'Fuss-free' means that they are easy to make, but also that kids love them, no fussing about 😋 It's a big batch, will serve family of five over two days! Or you can freeze the leftovers if you wish.
INGREDIENTS:
➡️ 1 kg of turkey thigh mince,
➡️ 5 leeks chopped,
➡️ 2 eggs,
➡️ 1 tsp of dried basil,
➡️ 1 tsp of dried oregano,
➡️ salt and pepper to taste,
➡️ 2 x 400 g tin of chopped tomatoes,
➡️ 4 garlic cloves pressed,
➡️ courgetti to serve.
METHOD:
Preheat the oven to 200C. Mix the mince, leeks, eggs and seasoning in a bowl, I simply use my hand to do it. Take small handfulls of the mixture and form tight balls, about the size of golf balls. Place them on a baking tray and and cook in the oven for 15 min. In the meantime liquidise the tomatoes and garlic using a blender.
Remove the meatballs from the oven and transfer them to a casserole dish. Pour the tomatoes over the meatballs. Turn the oven down to 175C. Return the dish to the oven and cook for about 45 min. Serve with courgetti 😋
