PALEO BANANA MUFFINS recipe (GLUTEN FREE / DAIRY FREE)

This is a fantastic recipe, it's so delicious and easy to make! These muffins are gluten and dairy free, and kids love them!


INGREDIENTS (for 12 muffins):


➡️ 4 eggs,

➡️ 4 mashed bananas,

➡️ 1/4 cup melted coconut oil,

➡️ 4 tbsp honey (optional),

➡️ 100 g ground almonds,

➡️ 2 tbsp coconut flour,

➡️ 1 tsp cinnamon,

➡️ 1 tsp baking powder,

➡️ 1 tsp bicarb soda,

➡️ 1/2 cup raisins soaked in hot water,

➡️ a splash of rice or almond milk (if the mixture is too thick).


METHOD:

Mix the eggs, bananas, coconut oil and honey together, then add the combined dry ingredients and quickly stir it all together, adding drained raisins at the end. If too thick add some milk substitute.

Bake 25 min at 175C.
