Rainbow Cobb Salad Recipe
How about a delicious rainbow cobb salad for lunch? 😋 It ticks all the boxes ➡️ good quality protein ✔️ healthy fats ✔️ rainbow of vegetables ✔️ It can be easily packed for a take-to-work lunch. And it is so much fun to make... and eat!!!
INGREDIENTS (for 2 people):
- 1 grilled chicken breast,
- 4 hard boiled eggs,
- 1 avocado,
- a colourful variety of vegetables, such as tomatoes, cucumber, spinach, red onion, olives, radishes,
- 2 tbsp of extra virgin olive oil,
- juice of half a lemon,
- 1 tsp of sesame seeds.
METHOD:
Cut the chicken breast into stripes, cut eggs into large cubes, slice avocado. Chop the rest of the vegetables. Place everything nicely on a plate. For the dressing mix olive oil with lemon juice and pour over your salad. Sprinkle with sesame seeds.
