BLACK BEAN VEGAN BURRITO Recipe. Super quick LUNCH/ DINNER idea!
Couldn’t be easier to make, delicious and colourful lunch/ dinner idea, full of veggie goodness, a perfect meatless plate.
INGREDIENTS:
2 tbsp coconut oil,
4 garlic cloves pressed,
1 onion chopped,
1 large carrot grated,
120 g sliced spring greens,
1 x 400 g can chopped tomatoes,
1 x 400 g can black beans rinsed,
1 tsp dried basil,
1 tsp dried oregano,
sea salt, black pepper,
brown rice and side salad to serve.
METHOD:
Lightly saute garlic, onion, carrot and spring greens in coconut oil, for about 8-10 minutes. Add chopped tomatoes, black beans and spices. Cover and cook on low for about 15 minutes. Serve with brown rice and side salad.
