Super quick TUNA SALAD and my favourite way of preparing KALE
When I am running out of time and I need quick lunch, this is my go to recipe, as it takes less than 5 minutes to make.
INGREDIENTS:
1 can (120g) of tuna in brine (drained),
1/4 of cucumber chopped,
1 small leek chopped,
2 tbsp of hummus (I use ready made hummus, Tesco Organic is my favourite one as it contains only good ingredients).
METHOD:
Couldn’t be easier, just mix everything together and enjoy.
Since this time I had it with a bunch of KALE, it’s a good moment to mention the best way of preparing it - it’s amazingly tasty, even my kids love it!
THE BEST WAY OF PREPARING KALE
Crush 3 garlic cloves and wait 10 minutes to preserve its powerful health benefits (I explained this in one of me earlier posts). Wash 2 bunches of kale, remove stems and shred the leaves. Heat 1 tbsp coconut oil, add the garlic and after about 2 minutes add shredded kale leaves. Cover the pan and set the heat on the lowest setting. It will be ready in about 8 more minutes.
